Shrimp, Avocado, & Tomato Salad

This salad is a simple, fresh summer meal you can prep ahead of time and eat later that night, no oven needed! It really is as easy as that! I like to serve this with quinoa, rice, or even chips or tortillas!


Ingredients:

  1. 2 cups precooked shrimp

  2. 2 medium avocados

  3. 2 medium tomatoes

  4. Garlic (2 pods or approx. 1tbsp diced)

  5. Lime juice

  6. 1/4 cup diced red onion

  7. 1tbsp green onion

  8. Salt and pepper to taste


Preparation:

  1. Cut up the shrimp, avocado, tomato, garlic, red onion, and green onion.

  2. Toss ingredients in a bowl and add the lime juice, salt, and pepper.

  3. Mix and serve! I prefer to chill the salad for at least 30 minutes before eating. If chilling longer, wait to add avocado until about an hour before serving.
